Turkey Pot Pie

I posted recently about a smoked turkey that my husband made. It was absolutely delicious! Well we had so much left over that I didn’t know what to do with it but couldn’t waste it. So I picked the rest of the turkey apart to make a turkey pot pie. My kids like chicken pot pie so I was sure they’d love this.
I was right! We ate the whole thing in one night! The smokiness of the turkey brought out so much flavor in the pie. We couldn’t get enough!

Turkey Pot Pie- 1- 10” Pie
- 1 box refrigerated pie crust. For top and bottom of pie.
- 4 tablespoons butter, divided
- 1 small onion, minced
- 2 stalks celery, chopped
- 2 carrots, diced
- 1 cup frozen peas
- 2 tablespoons dried parsley
- 1 teaspoon dried oregano
- salt and pepper to taste
- 2 cups chicken or turkey stock
- 2 potatoes, peeled and cubed
- 1 ½ cups cubed / shredded cooked turkey
- 3 tablespoons all-purpose flour
- ½ cup milk
- 1 egg and a tablespoon of milk (or water) for egg wash
Let pie crust sit out of the refrigerator to soften a bit while you prepare the pie filling.
Preheat oven to 425 degrees F (220 degrees C).
Melt 2 tablespoons butter in a large skillet over medium heat; add the onion, celery, carrots, parsley, oregano, and salt and pepper. Cook and stir until the vegetables are soft. Stir in the chicken/turkey stock. Bring mixture to a boil. Stir in the potatoes, and cook until tender but still firm.
In a medium saucepan, melt the remaining 2 tablespoons butter. Stir in the turkey and flour. Add the milk, and heat through. Stir the turkey mixture and the cup of peas into the vegetable mixture, and cook until thickened. Roll out the pie crust into the pie dish. Cool the mixture slightly, then pour mixture into the unbaked pie shell. Roll out the other tire crust and place on top of filling. Flute edges, and make 4 slits in the top crust to let out steam.
Scramble up your egg and milk and with a pastry brush, brush the egg mixture on top of the crust to give it a nice golden finish.
Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 20 minutes, or until crust is golden brown.
